Banana Peanut Butter Protein Bars

September 13th, 2014

I'm a big fan of Clif bars, but sometimes, I've just had one too many. When that happens, I like making my own chewy bars before heading out for a ride. These no-bake protein bars are jam-packed with good, wholesome ingredients, and make for an awesome trailside snack. And did I mention they're super easy to make?

  • 2 very ripe bananas
  • 3 cups quick oats
  • 1/2 cup chunky peanut butter
  • 1/2 cup chocolate whey protein powder
  • 1 tbsp cinnamon powder
  • 2 tbsp flaxseed
  • 3 tbsp honey
  • 1/3 cup chopped dates
  • 1/3 cup chopped apricots
  • 1/2 cup chopped almonds

  1. Peel bananas and drop them in a large bowl
  2. Add cinnamon and honey
  3. Using a fork, mash till you've reached a mushy, gooey consistency
  4. Add peanut butter, oats, protein powder, flaxseed, dates, apricots and almonds
  5. With wet hands, mix till everything is glued together and you have a thick, sticky batter
  6. Transfer into pan and spread evenly with fork
  7. Stick pan in the fridge for 45 minutes, or just about enough time to watch the best mountain bike movie ever made - Life Cycles.
  8. Cut into 1x3in bars
  9. Throw 2-3 in a small Ziploc bag
  10. Go for a ride!
